Description

These Bagel Breakfast Sliders are a fun and easy way to enjoy a complete breakfast in a handheld package. Mini bagels are filled with fluffy scrambled eggs, crispy bacon, and cheddar cheese, then brushed with a savory butter topping and baked until toasty and melty.

  • Cooking spray, for greasing the baking dish
  • 8 large eggs
  • 1/4 cup milk (whole, 2%, or skim)
  • 8 slices bacon
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons finely chopped fresh chives
  • 10 mini bagels, halved
  • 4 tablespoons cream cheese, softened
  • 1 1/2 cups shredded cheddar cheese
  • 3 tablespoons unsalted butter, melted
  • 2 teaspoons dried minced onion
  • 2 teaspoons granulated garlic (or garlic powder)
  • 2 teaspoons sesame seeds
  • 2 teaspoons poppy seeds

Instructions

  • Preheat Oven and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Grease a large baking dish (9×13-inch or similar size) with cooking spray.

  • Whisk Eggs and Milk: In a large bowl, whisk together the eggs and milk until light and frothy. Set aside.

  • Cook Bacon: In a large skillet over medium heat, cook the bacon slices until crispy. Remove the cooked bacon from the skillet and place it on a plate lined with paper towels to drain. Reserve about 1 tablespoon of the bacon fat in the skillet. Discard the remaining bacon fat.

  • Scramble Eggs: Pour the egg mixture into the skillet with the reserved bacon fat. Immediately reduce the heat to medium-low. Cook the eggs, stirring occasionally with a spatula or wooden spoon, until they are nearly set but still slightly soft.

  • Season Eggs: Season the scrambled eggs with salt and pepper to taste. Stir in the chopped chives. Remove the skillet from the heat.

  • Assemble Sliders:

    • Spread the softened cream cheese evenly over the bottom halves of the mini bagels.
    • Place the cream cheese-spread bagel bottoms side-by-side in the prepared baking dish.
    • Spoon the scrambled eggs evenly over the bagel bottoms.
    • Crumble the cooked bacon and sprinkle it evenly over the eggs.
    • Sprinkle the shredded cheddar cheese evenly over the bacon and eggs.
    • Place the top halves of the bagels on top of the cheese.
  • Make Butter Topping: In a small bowl, combine the melted butter, dried minced onion, granulated garlic (or garlic powder), sesame seeds, and poppy seeds. Stir well to combine.

  • Brush with Butter: Brush the butter topping evenly over the tops of the assembled bagel sliders, making sure to coat all the nooks and crannies.

  • Bake: Bake, uncovered, for about 10 minutes, or until the bagels are toasty and the cheese is melted and bubbly.

  • Serve: Remove from oven and serve warm.
