These Balsamic Soy Roasted Garlic Mushrooms are a simple yet incredibly flavorful side dish. Whole or halved mushrooms are tossed in a mixture of olive oil, balsamic vinegar, soy sauce, garlic, and thyme, then roasted until tender and caramelized.

- 2 pounds mushrooms (cremini, white button, or a mix), cleaned (see notes)
- 1 tablespoon olive oil
- 3 tablespoons balsamic vinegar
- 2 tablespoons soy sauce (or tamari, for gluten-free)
- 3 cloves garlic, chopped
- 1/2 teaspoon fresh thyme leaves, chopped (or 1/4 teaspoon dried thyme)
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Mushrooms: Clean the mushrooms with a damp paper towel or a mushroom brush. Do not rinse them under running water, as they will absorb too much moisture. If using large mushrooms, halve or quarter them. Smaller mushrooms can be left whole.
- Combine Ingredients: In a large bowl, combine the cleaned mushrooms, olive oil, balsamic vinegar, soy sauce (or tamari), chopped garlic, chopped fresh thyme (or dried thyme), salt, and black pepper.
- Toss to Coat: Toss everything together until the mushrooms are evenly coated with the marinade.
- Arrange on Baking Sheet: Arrange the marinated mushrooms in a single layer on a baking sheet. For best results, do not overcrowd the pan. Use two baking sheets if necessary.
- Roast: Roast in the preheated oven for 20 minutes, stirring halfway through, or until the mushrooms are tender, browned, and slightly caramelized.
- Serve.
Notes
- Mushrooms: Cremini mushrooms (also called baby bella mushrooms) or white button mushrooms work well in this recipe. You can also use a mix of different mushroom varieties.
- Cleaning Mushrooms: It’s best to clean mushrooms with a damp paper towel or a mushroom brush rather than rinsing them under running water. Mushrooms are like sponges and will absorb water, which can make them soggy when cooked.
