Description

This Sausage Green Bean Potato Casserole is a hearty and flavorful one-dish meal. It combines smoked sausage, baby creamer potatoes, green beans, and a savory blend of seasonings, all baked together for a comforting and satisfying dinner.

  • 1 1/2 pounds kielbasa or smoked sausage, sliced into 1/4-inch thick rounds
  • 2 pounds baby creamer potatoes, thoroughly washed and halved
  • Two 15-ounce cans green beans, drained
  • 1/8 cup (2 tablespoons) vegetable oil
  • 1/4 cup (1/2 stick) unsalted butter
  • 1 cup yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Slap Ya Mama® seasoning (or other Cajun seasoning blend)
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup water

Instructions

  • Preheat Oven and Prepare Baking Dish: Preheat your oven to 400°F (204°C). Lightly grease a 9×13-inch baking dish with nonstick cooking spray.
  • Prepare Potatoes: Wash and halve the baby creamer potatoes. Place the halved potatoes in a large, gallon-sized resealable plastic bag.
  • Season Potatoes: Add the vegetable oil, Slap Ya Mama® seasoning (or Cajun seasoning), black pepper, and red pepper flakes to the bag with the potatoes. Seal the bag tightly and shake well to ensure the potatoes are evenly coated with the oil and seasonings.
  • Cook Sausage: In a large skillet over medium-high heat, add the sliced kielbasa (or smoked sausage) and the 1/4 cup of water. Cook, stirring occasionally, until the sausage is browned and most of the water has evaporated. Remove the sausage from the skillet and let it cool slightly.
  • Add Sausage to Potatoes: Once the sausage is cool enough to handle, add it to the bag with the seasoned potatoes.
  • Sauté Onion and Garlic: In the same skillet, melt the butter over medium heat. Add the chopped onion and minced garlic. Sauté until the onions are translucent and fragrant, about 3-5 minutes.
  • Combine All Ingredients: Let the onion and garlic mixture cool slightly. Add the cooked onion and garlic mixture to the bag with the potatoes and sausage. Seal the bag and shake well to combine all ingredients.
  • Add Green Beans: Add the drained canned green beans to the bag. Seal the bag again and shake gently to distribute the green beans evenly.
  • Transfer to Baking Dish: Pour the entire contents of the bag into the prepared baking dish. Spread the mixture evenly.
  • Bake (Covered): Cover the baking dish tightly with aluminum foil. Bake for 40 minutes, or until the potatoes are tender when pierced with a fork.
  • Serve: Remove from the oven and serve hot.

Notes

  • Kielbasa/Sausage: You can use kielbasa, smoked sausage, or any other type of fully cooked sausage you prefer.
  • Potatoes: Baby creamer potatoes are recommended for their small size and creamy texture, but you can use other types of potatoes, cut into bite-sized pieces.
  • Green Beans: Canned green beans are used for convenience, but you can use fresh or frozen green beans if you prefer. If using fresh or frozen, you may need to increase the cooking time slightly.
  • Slap Ya Mama® Seasoning: This is a popular Cajun seasoning blend. If you don’t have it, you can substitute another Cajun seasoning or a mixture of salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper.
  • Spice Level: Adjust the amount of red pepper flakes to your preference.
  • Serving Suggestions: This casserole is a complete meal on its own, but you can serve it with a side salad or crusty bread.
