Description
This simple and delicious version of avocado toast has a healthy dose of cream cheese, juicy heirloom tomatoes, poached eggs, and microgreens! A perfect elevated breakfast or brunch.

- 2 thick slices sourdough bread (or your favorite crusty grainy bread)
- 1 ripe avocado, pitted
- Squeeze of fresh lime juice (about 1-2 teaspoons)
- 1/4 teaspoon salt (plus more for seasoning eggs/toast)
- 2–4 tablespoons cream cheese, softened
- 1 ripe heirloom tomato, sliced
- 2 large eggs
- Microgreens, for garnish
- Freshly ground black pepper, to taste
Instructions
- Toast Bread: Toast the thick slices of sourdough bread until golden brown and crisp using a toaster, oven broiler, or skillet.
- Prepare Smashed Avocado: While the bread toasts, place the avocado flesh in a small bowl. Add 1/4 teaspoon salt and a squeeze of fresh lime juice. Mash with a fork until it reaches your desired consistency (chunky or smooth).
- Cook Eggs: Prepare the eggs according to your preference: poached, fried, scrambled, or sunny-side up. (For poached eggs: bring water in a small pot to a gentle simmer, crack eggs into small bowls, create a gentle vortex in the water, and slide eggs in one at a time. Cook for 3-4 minutes until whites are set and yolks are runny. Remove with a slotted spoon).
- Slice Tomato: Slice the heirloom tomato.
- Assemble Toast:
- Spread a generous layer of softened cream cheese on each slice of warm toast.
- Top the cream cheese with the smashed avocado mixture, spreading it evenly.
- Arrange the heirloom tomato slices over the avocado.
- Carefully place a cooked egg (poached or other style) on top of the tomatoes.
- Garnish and Serve: Top generously with microgreens. Season with additional salt and freshly ground black pepper to taste. Serve immediately and devour!

- Bread: Use thick slices of good quality, crusty bread that can hold up to the toppings.
- Avocado: Choose a ripe avocado that yields to gentle pressure. Adjust lime and salt to taste.
- Eggs: Poached eggs are classic, but any style works! Cook them just before assembling so they are warm.
- Tomatoes: Heirloom tomatoes offer beautiful color and flavor. Any ripe, flavorful tomato can be used.
- Cream Cheese: Softened cream cheese spreads more easily. Use plain or flavored (like chive & onion).
