- 5 large russet potatoes, washed and dried
- 1/3 cup vegetable oil (or canola oil)
- 5 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1 tablespoon cornstarch
- 2 teaspoons black pepper
- 1 1/2 teaspoons kosher salt
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1/4 cup minced fresh cilantro

- Prepare Potatoes: Wash and dry the russet potatoes thoroughly. Cut each potato in half lengthwise. Then, cut each half into 4 equally sized wedges, for a total of 8 wedges per potato.
- Preheat Oven and Baking Sheets: Preheat your oven to 400°F (200°C). Line two large baking sheets with parchment paper.
- Combine Potatoes, Oil, and Garlic: In a large mixing bowl, combine the potato wedges, vegetable oil, and minced garlic. Toss to coat the potatoes evenly.
- Add Seasonings: Add the grated Parmesan cheese, cornstarch, black pepper, kosher salt, onion powder, paprika, chili powder, and minced cilantro to the bowl with the potatoes.
- Mix Thoroughly: Toss everything together until the potatoes are evenly coated with the seasonings. Using your hands is the most effective way to ensure even distribution.
- Arrange on Baking Sheets: Spread the seasoned potato wedges in a single layer on the prepared baking sheets. Leave some space between each wedge to allow for air circulation and even cooking. For best results, arrange the wedges skin-side down, with the pointed tip facing upwards.
- Bake (Initial): Bake in the preheated oven for 15 minutes.
- Reduce Temperature and Continue Baking: Keep the baking sheets in the oven. Reduce the oven temperature to 375°F (190°C). Continue baking for another 40 minutes, or until the potatoes are golden brown, crispy on the outside, and tender on the inside.
