Description

This DIY Lunchable Brunchable is a fun, customizable, and make-ahead breakfast or snack box. It features mini pancakes, sausage patties, cheese, strawberries, and yogurt, providing a balanced and delicious meal that’s perfect for kids and adults alike.

  • 16 fresh strawberries, washed and hulled
  • 32 ounces strawberry yogurt (or your favorite flavor)
  • 32 mini pancakes (homemade or store-bought, see notes)
  • 16 cooked sausage patties (breakfast sausage)
  • 4 slices American cheese, cut into quarters (or your favorite cheese)

Instructions

  • Prepare Ingredients:
    • Wash and hull the strawberries.
    • Cook the sausage patties according to package directions or your favorite recipe. Let them cool completely.
    • Cook or prepare the mini pancakes. If using frozen pancakes, cook according to the package directions. Let cool completely.
    • Cut the American cheese slices into quarters.
  • Assemble Lunchboxes: Divide the ingredients evenly among your chosen lunchbox containers. A typical arrangement might include:
    • One section for mini pancakes.
    • One section for cooked sausage patties.
    • One section for cheese squares.
    • One section for fresh strawberries.
    • One section/container for yogurt.
  • Seal and Refrigerate: Seal the lunchbox containers tightly with their lids. Refrigerate until ready to use, up to 3 days.

Notes

  • Mini Pancakes: You can use homemade mini pancakes, store-bought mini pancakes (fresh or frozen), or even mini waffles. If using frozen pancakes or waffles, cook them according to package directions and let them cool completely before assembling the lunchboxes.
  • Sausage Patties: Use your favorite brand of pre-cooked or ready-to-cook breakfast sausage patties. Make sure they are fully cooked and cooled before adding them to the lunchboxes.
  • Cheese: American cheese is suggested, but you can use any type of cheese you like, such as cheddar, Monterey Jack, or provolone. Cut the cheese into small squares or shapes that fit well in the lunchbox compartments.
