Description

These incredibly easy 3-Ingredient Cheesecake Keto Fat Bombs require no baking! Cream cheese, peanut butter, and a keto-friendly sweetener are mixed, rolled, and frozen for a simple and satisfying low-carb treat. An optional dark chocolate chip coating adds extra decadence.

  • 4 ounces (115g) cream cheese, softened to room temperature
  • 2 ounces (1/4 cup) creamy peanut butter, room temperature
  • 1 ounce (approx. 2 tablespoons) Swerve confectioners’ sweetener (or other powdered keto-friendly sweetener)
  • Optional Coating: 1/2 cup crushed sugar-free dark chocolate chips

Instructions

  • Soften Ingredients: Ensure the cream cheese and peanut butter are softened to room temperature for easy mixing.
  • Combine Ingredients: In a medium bowl, combine the softened cream cheese, room temperature peanut butter, and powdered sweetener. Stir with a fork or spatula until thoroughly combined and very smooth.
  • Prepare Baking Sheet: Line a baking sheet or plate with parchment paper or wax paper.
  • Shape Fat Bombs: Using a small cookie scoop (about 1 tablespoon size) or your hands, scoop out small portions of the mixture and roll them into balls (roughly golf-ball sized or smaller).
  • Coat (Optional): If desired, place the crushed sugar-free dark chocolate chips in a shallow dish. Roll each fat bomb ball in the crushed chocolate chips until coated.
  • Arrange and Freeze: Place the formed fat bombs (coated or uncoated) on the prepared lined baking sheet. Freeze for at least 2 hours, or until solid.
  • Store: Once solid, transfer the fat bombs to an airtight container or freezer bag. Store in the freezer.
