Apple and Whipped Feta Crostinis

Description

This Apple and Feta crostini recipe is super easy to make and looks wonderful on a party tray! Crispy toasted baguette slices are topped with creamy whipped feta, thin apple slices, and a drizzle of honey.

For the Crostini Base:

  • 12 slices of baguette bread (about 1/2 inch thick)
  • Olive oil, for brushing

For the Whipped Feta:

  • 1/2 cup crumbled feta cheese (preferably block feta in brine)
  • 2 tablespoons plain Greek yogurt

For Topping & Garnish:

  • 1 crisp apple (such as Honeycrisp, Fuji, or Gala), thinly sliced
  • 2 tablespoons honey, for drizzling
  • Extra crumbled feta cheese, for sprinkling (optional)
  • Fresh herbs (like thyme or parsley), chopped (optional)

Instructions

  • Make Crostini:

    • Preheat your oven to 400°F (200°C) OR set the broiler to high.
    • Arrange the baguette slices in a single layer on a baking sheet.
    • Brush the top side of each slice lightly with olive oil.
    • Oven Method: Bake at 400°F for 5-8 minutes, or until golden brown and crisp.
    • Broiler Method: Broil for 1-2 minutes, watching very carefully, until lightly golden brown. (Broiling is faster but requires close attention to prevent burning).
    • Remove the toasted baguette slices (crostini) from the oven and let them cool slightly.
  • Make Whipped Feta: While the bread toasts, combine the 1/2 cup crumbled feta cheese and Greek yogurt in a food processor. Blend until smooth and creamy. (Alternatively, mash vigorously with a fork in a small bowl until mostly smooth).

  • Assemble Crostinis:

    • Spread about a teaspoon of the whipped feta mixture evenly over each cooled crostini slice.
    • Arrange one or two thin apple slices on top of the whipped feta.
  • Finish and Serve: Drizzle honey over each assembled crostini. Sprinkle with extra crumbled feta cheese and chopped fresh herbs, if desired. Serve immediately.


Notes

  • Bread: Use a good quality baguette that slices easily. Day-old bread often works well for crostini.
  • Toasting: Keep a close eye on the bread whether baking or broiling, as it can brown very quickly.
  • Feta: Using block feta packed in brine generally yields a creamier whipped feta than pre-crumbled, drier varieties.
  • Yogurt: Greek yogurt helps make the feta spreadable. You can substitute sour cream.
  • Apples: Choose crisp, sweet or tart apples. Slice them thinly just before assembling to prevent browning, or toss lightly with a tiny bit of lemon juice.
  • Storage: Crostini are best served fresh shortly after assembly to maintain the crispness of the bread. Whipped feta can be made ahead and stored in the fridge.
