Description
These Berries and Cream Popsicles are a refreshing and easy frozen treat. Creamy honey-sweetened yogurt is swirled with a vibrant mixed berry puree for a delicious and pretty popsicle perfect for warm weather.

- 1 1/4 cups honey vanilla Greek yogurt (or plain Greek yogurt + honey to taste)
- 3 tablespoons agave nectar syrup (or honey, or maple syrup)
- 3/4 cup frozen whipped topping (like Cool Whip), thawed
- 2 1/4 cups frozen mixed berries
- 1 cup sweetened almond milk (or other milk)
Instructions
- Make Yogurt Cream Mixture: In a medium bowl, stir together the honey vanilla Greek yogurt and agave nectar until well combined. Gently fold in the thawed whipped topping until just combined. Cover the bowl and place it in the refrigerator until needed.
- Make Berry Puree: Place the frozen mixed berries and sweetened almond milk in a blender. Blend until smooth.
- Layer Popsicles: Fill your popsicle molds by alternating layers of the chilled yogurt cream mixture and the berry puree until each mold is filled. You can use a spoon or small spatula to add the layers. Optional: Use a thin stick or skewer to gently swirl the layers together for a marbled effect, if desired.
- Insert Sticks: Place the popsicle mold lid on top, or cover the top of the mold tightly with aluminum foil. Insert popsicle sticks through the lid slots or carefully make small slits in the foil and insert the sticks, ensuring they stand upright.
- Freeze: Place the mold in the freezer for at least 4 hours, or until the popsicles are completely frozen solid.
- Unmold: When ready to serve, briefly run warm water over the outside of the popsicle molds for 10-15 seconds to help release the popsicles. Gently pull the popsicles out by their sticks.

- Yogurt: Honey vanilla Greek yogurt is specified, but plain Greek yogurt works well too – just adjust the sweetener (agave/honey) to your taste. Regular yogurt can be used but will result in less creamy popsicles.
- Sweetener: Agave nectar, honey, or maple syrup can be used interchangeably. Adjust the amount based on the sweetness of your yogurt and berries.
- Whipped Topping: Thawed frozen whipped topping (like Cool Whip) adds lightness and stability. You could substitute stabilized homemade whipped cream.
- Berries: Frozen mixed berries create a thick, cold puree. You can use a specific type of frozen berry (strawberries, raspberries, blueberries) if preferred.
- Milk: Sweetened almond milk is used, but other sweetened or unsweetened plant-based or dairy milks can be substituted.
- Layering: For distinct layers, ensure the yogurt mixture is well-chilled before layering. For a swirled effect, gently drag a skewer up and down through the layers before inserting the sticks.
- Unmolding: Don’t run water over the molds for too long, or the popsicles will melt too much.
- Storage: Keep popsicles in the mold or transfer them to freezer bags once frozen solid.
