Description

These Crockpot Pork Chops are incredibly tender and flavorful. Bone-in pork chops are slow-cooked with mushrooms, onions, and a creamy sauce made from condensed soups and beef broth. It’s an easy and comforting meal perfect for a busy weeknight.

  • 4 bone-in pork chops (about 3 pounds total)
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 (10.5-ounce) can condensed cream of mushroom soup
  • 1 (10.5-ounce) can condensed cream of chicken soup
  • 3/4 cup reduced-sodium beef broth
  • 2 cups sliced mushrooms (cremini, white button, or a mix)
  • 1 small yellow onion, sliced

Instructions

  • Season Pork Chops: Season the pork chops generously on both sides with salt, black pepper, paprika, and garlic powder.
  • Sear Pork Chops: Heat the olive oil in a large skillet over medium-high heat. Sear the pork chops for about 3 minutes per side, or until nicely browned. This step adds flavor and color. Remove the pork chops from the skillet and set aside.
  • Deglaze Skillet (Optional): If there are browned bits stuck to the bottom of the skillet after searing the pork chops, you can deglaze the pan. Add a splash of the beef broth to the hot skillet and use a wooden spoon or spatula to scrape up any browned bits. Pour this liquid into the slow cooker in the next step.
  • Prepare Slow Cooker: Place the sliced mushrooms and sliced onions in the bottom of your slow cooker.
  • Add Pork Chops: Place the seared pork chops on top of the mushrooms and onions in the slow cooker.
  • Combine Liquids: In the skillet you used to sear the pork chops (or in a separate bowl if you did not deglaze the pan in Step 3), combine the condensed cream of mushroom soup, condensed cream of chicken soup, and beef broth. Whisk until well combined and smooth.
  • Pour Sauce Over Pork Chops: Pour the soup mixture evenly over the pork chops in the slow cooker.
  • Slow Cook: Cover the slow cooker and cook on low for 7-8 hours, or until the pork chops are very tender and easily pierced with a fork.
  • Thicken Sauce (Optional): If you prefer a thicker sauce, you can make a cornstarch slurry. About 30 minutes before the end of the cooking time, whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water in a small bowl until smooth. Stir the slurry into the slow cooker. Continue cooking, uncovered, for the remaining 30 minutes, or until the sauce has thickened.
  • Serve: Serve the pork chops hot, with the sauce spooned over the top.

Notes

  • Pork Chops: Bone-in pork chops are recommended for this recipe because they tend to be more flavorful and less likely to dry out during slow cooking. You can use boneless pork chops, but you may need to reduce the cooking time.
  • Mushrooms: You can use any type of mushrooms you like, such as cremini, white button, or a mix.
  • Onions: You can use yellow, white, or red onions.
  • Serving Suggestions: Serve these crockpot pork chops over mashed potatoes, rice, noodles, or polenta. They’re also delicious with a side of steamed vegetables or a salad.
