Description

Break out the tortilla chips for this fresh and healthy black bean dip. It’s more like a salsa or relish, combining black beans, tomatoes, red onion, lime, and spices. Perfect for any entertaining occasion!


Ingredients

  • 1 (15-ounce) can black beans, rinsed and drained
  • 1/2 cup diced ripe tomatoes (about 1 medium tomato)
  • 1/4 cup diced red onion
  • 1 tablespoon fresh lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon kosher salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1 tablespoon chopped fresh basil (or cilantro)

Instructions

  • Combine Ingredients: In a medium bowl, combine the rinsed and drained black beans, diced tomatoes, diced red onion, fresh lime juice, ground cumin, kosher salt, black pepper, and chopped fresh basil (or cilantro).
  • Mix Well: Stir all the ingredients together until well combined.
  • Adjust Seasoning: Taste the mixture and adjust seasoning with more salt or pepper, if desired. You can also add more lime juice for extra tang or cumin for more spice.
  • Chill (Recommended): Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Serve: Serve the black bean dip chilled or at room temperature with tortilla chips, crackers, or vegetable sticks.

Notes

  • Beans: Ensure black beans are well rinsed and drained.
  • Tomatoes: Use ripe tomatoes. Removing the seeds before dicing can prevent the dip from becoming too watery, but it’s optional.
  • Onion: If you find raw red onion too strong, soak the diced onion in cold water for 10-15 minutes, then drain well before adding.
  • Herbs: Fresh basil or cilantro works well. Use whichever you prefer.
  • Serving Suggestions: Great as a dip with tortilla chips, pita chips, or vegetables. Also works well as a topping for tacos, salads, or grilled chicken.
  • Storage: Store leftover dip in an airtight container in the refrigerator for up to 3-4 days.
