Description

This Frozen Peach Bellini is a refreshing and bubbly cocktail perfect for brunch, celebrations, or warm weather. Frozen peaches are blended with sugar and sparkling wine for a simple and delicious slushy treat.

  • 3 cups frozen peach slices (or fresh peaches + more ice)
  • 1 1/2 tablespoons granulated sugar (or adjust to taste)
  • 1 cup ice cubes
  • 3 cups Prosecco, Champagne, or other sparkling wine, chilled
  • Fresh peach slices, for garnish (optional)

Instructions

  • Blend Fruit Base: Add the frozen peaches, sugar, and ice cubes to a blender. Blend on high speed until the mixture is smooth and slushy.
  • Add Sparkling Wine: Pour the chilled Prosecco (or other sparkling wine) into the blender with the peach mixture.
  • Pulse Briefly: Secure the lid and pulse the blender just a few times (2-3 short pulses) until the sparkling wine is just incorporated. Do not over-blend at this stage, or you will lose the carbonation.
  • Serve: Immediately divide the mixture among Champagne flutes or other cocktail glasses. Garnish each glass with a fresh peach slice, if desired. Enjoy!

Notes

  • Peaches: Using frozen peach slices creates the desired thick, frozen consistency without needing excessive ice, which can dilute the flavor. If using fresh peaches, you will need to add significantly more ice.
  • Sparkling Wine: Use chilled Prosecco (traditional for Bellinis), Champagne, Cava, or another dry or off-dry sparkling wine.
  • Sweetness: Adjust the amount of sugar based on the sweetness of your peaches and your personal preference. You can also substitute simple syrup or agave nectar.
  • Blending: Blend the fruit base until smooth, but only pulse briefly after adding the sparkling wine to retain as much fizz as possible.
