Description

So rich in flavor, you’ll be satisfied with just a few bites! These no-bake Keto Cream Cheese Peanut Butter Fat Bombs are easy to make and perfect for a quick energy boost or satisfying a sweet craving.


Ingredients

  • 3/4 cup creamy peanut butter, softened/room temperature (see notes)
  • 2 tablespoons unsalted butter, softened
  • 4 ounces (1/2 block) cream cheese, softened
  • 3/4 cup superfine almond flour
  • 1 tablespoon fresh lemon juice
  • 1/4 cup Swerve Confectioners’ style sweetener (or other powdered keto-friendly sweetener), adjust to taste

Instructions

  • Prepare Molds: Line 12 mini muffin tin cups with paper liners or have an ice cube tray ready. Set aside.
  • Combine Wet Ingredients: In a medium bowl, combine the softened cream cheese, softened butter, and softened/room temperature peanut butter. Beat with an electric mixer or stir vigorously with a spatula until completely smooth and well combined.
  • Add Dry Ingredients & Lemon: Add the almond flour, lemon juice, and powdered sweetener to the cream cheese mixture. Whisk or stir until thoroughly combined and a thick dough forms.
  • Portion into Molds: Evenly distribute the mixture into the prepared mini muffin liners or ice cube tray compartments. Press down lightly to compact the mixture.
  • Freeze: Place the muffin tin or ice cube tray in the freezer until the fat bombs are completely firm, typically 1-2 hours depending on size.
  • Store: Once solid, remove the fat bombs from the liners or molds. Store them in an airtight container or freezer bag in the freezer.

Notes

  • Softened Ingredients: Using softened cream cheese, butter, and room temperature peanut butter makes mixing much easier and results in a smoother texture.
  • Peanut Butter: Use creamy peanut butter, checking labels to ensure it’s low in sugar for keto. Natural peanut butter may be drier; you might need a touch more butter or cream cheese if using it.
  • Sweetener: Powdered keto-friendly sweeteners like Swerve Confectioners’ style, erythritol, or monk fruit blend work best as they dissolve easily. Adjust the amount to your taste.
  • Lemon Juice: The small amount of lemon juice helps balance the richness of the peanut butter and cream cheese.
  • Storage: These fat bombs must be stored in the freezer to maintain their shape and texture. They will soften significantly at room temperature.
