Description
This Peach Crisp is a delicious and easy dessert that highlights the sweetness of fresh peaches. A simple, buttery oat crumble topping complements the warm, spiced fruit filling.
Ingredients
For the Peach Filling:
- 8 cups peeled and thinly sliced fresh peaches (see notes)
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
For the Crisp Topping:
- 3/4 cup packed light brown sugar
- 1/2 cup all-purpose flour
- 1/2 cup (1 stick) salted butter, softened to room temperature
- 1 teaspoon ground cinnamon
- 1 3/4 cups old-fashioned rolled oats (not instant or quick-cooking)
Instructions
-
Preheat Oven and Prepare Pan: Preheat your oven to 400°F (200°C). Butter a 9×9-inch square baking dish (or a similar-sized baking dish, such as an 8×8-inch or a 2-quart oval baking dish).
-
Prepare Peach Filling: In a large bowl, combine the peeled and thinly sliced peaches, granulated sugar, 2 tablespoons of all-purpose flour, cornstarch, 1 teaspoon of cinnamon, and salt. Toss gently to combine, ensuring the peaches are evenly coated.
-
Transfer Filling to Pan: Pour the peach mixture into the prepared baking dish and spread it evenly.
-
Make Crisp Topping: In the same large bowl (no need to wash it), combine the brown sugar, 1/2 cup of all-purpose flour, softened butter, and 1 teaspoon of cinnamon.
-
Cut in the butter: Using your fingertips, a pastry blender, or a fork, cut in the softened butter into the dry ingredients until the mixture resembles coarse crumbs.
-
Add oats
-
Add Topping: Sprinkle the crumble topping evenly over the peach filling in the baking dish.
-
Bake: Bake for 20-25 minutes, or until the topping is golden brown and the peach filling is bubbling. If the topping starts to brown too quickly, loosely tent the dish with foil.
-
Cool Slightly: Remove the peach crisp from the oven and let it cool for at least 10 minutes before serving. This allows the filling to set slightly.
-
Serve: Serve warm, with vanilla ice cream or whipped cream, if desired.
Notes
- Peaches: Use ripe but firm peaches for the best results. You can substitute frozen, sliced peaches (thaw completely and drain any excess liquid before using).
- Buttered Pecans: For a flavor boost, include them on the crumble.
- Brown Sugar: Light brown sugar is recommended, but you can use dark brown sugar for a more intense molasses flavor.
- Oats: Use old-fashioned rolled oats, not instant or quick-cooking oats.
- Serving Suggestions: This peach crisp is delicious served warm with a scoop of vanilla ice cream or a dollop of whipped cream.
- Storage: store in the fridge for 3-4 days
