Description

These Raspberry Frost Bites are a breeze to make and offer a refreshing, healthy treat! Fresh raspberries are dipped in creamy Greek yogurt, optionally sweetened with honey, coated in crunchy graham crackers or granola, and frozen until firm.

Ingredients

Scale
  • 1 pint fresh raspberries
  • 1 cup vanilla Greek yogurt (or any preferred yogurt)
  • 1/4 cup honey (optional, for added sweetness)
  • 1/2 cup crushed graham crackers or granola, for coating

Instructions

  • Prepare Raspberries: Gently rinse the fresh raspberries and pat them completely dry with paper towels. Drying is important so the yogurt adheres properly.
  • Prepare Yogurt: In a small bowl, place the vanilla Greek yogurt. If desired for added sweetness, stir the honey into the yogurt until well combined.
  • Dip Raspberries: Holding one raspberry at a time, gently dip it into the Greek yogurt, ensuring it’s evenly coated. Let any excess yogurt drip off.
  • Coat Raspberries: Immediately roll the yogurt-coated raspberry in the crushed graham crackers or granola until coated.
  • Arrange on Baking Sheet: Place the coated raspberry on a baking sheet lined with parchment paper or wax paper. Repeat the dipping and coating process with the remaining raspberries, arranging them in a single layer on the baking sheet.
  • Freeze: Place the baking sheet in the freezer for at least 1 hour, or until the yogurt coating is firm and the bites are frozen.
  • Serve: Enjoy these refreshing bites straight from the freezer!

Notes

  • Raspberries: Ensure raspberries are completely dry before dipping.
  • Yogurt: Vanilla Greek yogurt is suggested, but plain Greek yogurt or other yogurt flavors can be used. Greek yogurt creates a thicker coating.
  • Sweetness: The honey is optional. Adjust the amount based on the sweetness of your yogurt and berries, and your personal preference.
  • Coating: Graham cracker crumbs or granola add a nice crunch. You could also use crushed nuts or shredded coconut.
  • Freezing: Ensure the bites are frozen solid before transferring them for storage, if not eating immediately.
  • Storage: Store frozen bites in an airtight container or freezer bag in the freezer for up to 1 month for best quality.
