You can now make your favourite patio happy hour drink at HOME. You heard me! We’ve created such a great recipe for a true Okanagan Peach Bellini that you will be sipping all summer long. A frozen blend of peaches, strawberries, white wine, and peach schnapps. Cheers!


Ingredients

  • 2 cups frozen sliced peaches
  • 1 cup frozen strawberries
  • 2 cups chilled white wine (such as Pinot Grigio, Sauvignon Blanc, or Riesling)
  • 2 ounces peach schnapps
  • Handful of ice cubes (adjust amount for consistency)
  • Fresh peach or strawberry slice, for garnish (optional)

Instructions

  • Combine Ingredients: Add the frozen peaches, frozen strawberries, chilled white wine, peach schnapps, and a handful of ice cubes to a blender.
  • Blend: Secure the lid and blend on high speed until the mixture is smooth and reaches a slushy-like consistency.
  • Adjust Consistency: If the mixture is too thin, add more ice cubes. If it’s too thick, add a splash more white wine or a little water. Blend again briefly until your desired consistency is reached.
  • Serve: Pour immediately into chilled glasses (like wine glasses or champagne flutes). Garnish with a fresh peach or strawberry slice, if desired. Serve immediately.

Notes

  • Frozen Fruit: Using frozen peaches and strawberries is key to achieving the thick, frozen texture without overly diluting the drink with ice.
  • White Wine: Choose a white wine you enjoy drinking. Dry or off-dry varieties like Pinot Grigio, Sauvignon Blanc, or a dry Riesling work well. Ensure it’s well-chilled.
  • Sweetness: This Bellini gets sweetness from the fruit, wine, and schnapps. If you prefer a sweeter drink, you can add 1-2 teaspoons of simple syrup or agave nectar before blending.
