Description

These Guacamole Stuffed Strawberries Bites are a surprising and perfect last-minute appetizer! Fresh strawberries are filled with a simple, creamy guacamole for a unique flavor combination.


Ingredients

  • 1 pound (450g) fresh strawberries (preferably large and uniform in size)
  • 1 ripe avocado
  • 1 tablespoon mayonnaise
  • Fresh lime juice, to taste (start with 1-2 teaspoons)
  • Salt, to taste
  • 1 teaspoon chili pepper flakes (optional)
  • Fresh chives, chopped (for garnish)

Instructions

  • Prepare Strawberries:

    • Rinse the strawberries gently and pat them completely dry with paper towels.
    • Cut the green leafy top (hull) off each strawberry.
    • Using the tip of a paring knife or a small spoon, carefully carve a small hole into the core of each strawberry from the top, creating a cavity for the filling. Be careful not to cut all the way through.
    • Slice a tiny bit off the pointed bottom of each strawberry so it can stand upright stably on a platter.
  • Make Guacamole Filling:

    • Cut the avocado in half, remove the pit, and scoop the flesh into a medium bowl.
    • Mash the avocado thoroughly with a fork until it reaches a smooth consistency.
    • Add the mayonnaise, lime juice (start with 1 teaspoon), salt, and chili pepper flakes (if using). Stir well until combined. Taste and add more lime juice or salt if needed.
  • Fill Strawberries:

    • Transfer the guacamole filling to a piping bag fitted with a small round tip, or to a resealable plastic bag (like a Ziploc bag) with a small corner snipped off. (Alternatively, carefully fill using a small spoon).
    • Pipe or spoon the guacamole filling into the cavity of each prepared strawberry.
  • Garnish and Serve:

    • Arrange the guacamole-stuffed strawberries on a serving platter.
    • Sprinkle with chopped fresh chives and additional chili flakes, if desired.
    • Serve immediately.

Notes

  • Strawberries: Choose large, ripe but firm strawberries that will be easy to carve and hold their shape. Ensure they are completely dry before filling.
  • Avocado: Use a ripe avocado that mashes easily.
  • Guacamole: This is a simplified guacamole. Feel free to add other traditional guacamole ingredients like finely minced red onion or cilantro if desired.
  • Filling: A piping bag or zip-top bag makes filling the strawberries neater and easier.
  • Serving: These are best served immediately after preparation, as the strawberries can release moisture and the avocado may brown over time.
  • Storage: Due to the nature of the fresh ingredients, storing leftovers is not recommended.
