Description

This Loaded Cucumber & Avocado Sandwich is a fresh, flavorful, and satisfying vegetarian sandwich. It features a creamy ricotta-cheddar spread, crisp cucumber and bell pepper slices, and rich avocado, all on lightly toasted whole-wheat bread.

  • 3 tablespoons shredded extra-sharp Cheddar cheese
  • 2 tablespoons ricotta cheese (whole milk or part-skim)
  • 4 teaspoons finely sliced chives
  • 2 teaspoons fresh lemon juice
  • Ground black pepper, to taste
  • 2 slices whole-wheat sandwich bread, lightly toasted
  • 1/3 cup thinly sliced cucumber (English or Persian recommended)
  • 1/4 cup thinly sliced red bell pepper
  • 1/3 ripe avocado, thinly sliced
  • Salt to taste

Instructions

  • Make Cheese Spread: In a small bowl, combine the shredded extra-sharp Cheddar cheese, ricotta cheese, finely sliced chives, fresh lemon juice, and ground black pepper. Stir well until thoroughly combined.
  • Toast Bread (Lightly): Lightly toast the two slices of whole-wheat sandwich bread.
  • Spread Cheese Mixture: Spread half of the cheese mixture evenly over one slice of the toasted bread. Spread the other half of the cheese mixture evenly over the other slice of toasted bread.
  • Layer Vegetables: On one slice of bread (with the cheese spread), layer the thinly sliced cucumber, thinly sliced red bell pepper, and sliced avocado.
  • Assemble Sandwich: Top with the other slice of toasted bread, spread-side down, to create the sandwich.
  • Serve: Serve immediately.

Notes

  • Cheese: Extra-sharp Cheddar cheese provides the best flavor, but you can use other types of cheese, such as sharp cheddar, Monterey Jack, or pepper jack.
  • Ricotta Cheese: Whole milk ricotta cheese will create the creamiest spread, but part-skim ricotta can also be used.
  • Cucumber: English or Persian cucumbers are recommended for their thin skin and fewer seeds. If using a regular cucumber, you may want to peel it and remove the seeds.
  • Red Bell Pepper: You can substitute other colors of bell pepper, such as yellow or orange.
  • Avocado: Use a ripe but firm avocado for the best texture and flavor.
  • Bread: Whole-wheat sandwich bread is recommended for its flavor and nutrition, but you can use other types of bread, such as sourdough, multigrain, or white bread.
