Description
This Pineapple Strawberry Mimosa is a refreshing and festive twist on the classic mimosa. It combines the sweetness of strawberries and pineapple juice with the bubbly effervescence of Champagne or Prosecco.

- 12 medium-sized fresh strawberries, plus more for garnish (optional)
- 2–3 cups pineapple juice, chilled
- 1 (750ml) bottle Champagne or Prosecco, chilled
- Fresh pineapple wedges or slices, for garnish (optional)
Instructions
- Prepare Strawberries: Wash the fresh strawberries and remove the stems (hull them).
- Muddle Strawberries: Place 2 strawberries in the bottom of each Champagne flute. Using a muddler, the back of a spoon, or a fork, gently muddle (mash) the strawberries in the bottom of each glass. You want to release their juices and flavor, but not completely pulverize them.
- Add Champagne/Prosecco: Carefully pour chilled Champagne or Prosecco into each glass, filling it about 2/3 full.
- Top with Pineapple Juice: Top off each glass with the chilled pineapple juice, adjusting the amount to your preference.
- Garnish (Optional): Garnish each mimosa with a fresh strawberry slice, a pineapple wedge, or both.
- Serve Immediately
Notes
- Strawberries: Use fresh, ripe strawberries for the best flavor.
- Pineapple Juice: Use 100% pineapple juice. Chill the juice before making the mimosas.
- Champagne/Prosecco: Use a dry (brut) or extra-dry Champagne or Prosecco. The sweetness will come from the fruit and juice.
- Muddling: Muddling the strawberries releases their flavor and adds a beautiful color to the drink. Be gentle; you don’t want to completely crush them.
- Serving Suggestions: These mimosas are perfect for brunch, bridal showers, or any special occasion. Serve them in Champagne flutes for an elegant presentation.
- Storage
