Description

These Sausage and Egg Breakfast Pizzas are a fun and easy way to enjoy a savory breakfast. English muffins are dipped in an egg mixture, topped with cooked sausage, mozzarella cheese, and diced red bell pepper, then baked until golden and bubbly.

  • 1/2 pound breakfast sausage (mild, hot, or maple)
  • 4 large eggs
  • 2 tablespoons milk (whole, 2%, or skim)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of cayenne pepper (optional)
  • 6 English muffins, split
  • 1 cup shredded mozzarella cheese
  • 1 medium red bell pepper, seeded and diced

Instructions

  • Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet.

  • Cook Sausage: In a medium skillet over medium heat, cook the breakfast sausage, breaking it up with a spoon or spatula, until it’s fully cooked and no longer pink. Drain off any excess grease. Set the cooked sausage aside.

  • Prepare Egg Mixture: In a shallow dish (large enough to dip the English muffin halves), whisk together the eggs, milk, salt, black pepper, and cayenne pepper (if using) until well combined.

  • Dip English Muffins: Dip each English muffin half into the egg mixture, turning to coat both sides. Don’t soak the muffins for too long, or they may become soggy.

  • Arrange on Baking Sheet: Place the egg-dipped English muffin halves on the prepared baking sheet.

  • Top with Ingredients:

    • Divide the cooked sausage evenly among the English muffin halves, spreading it over the surface.
    • Sprinkle the shredded mozzarella cheese evenly over the sausage.
    • Top with the diced red bell pepper.
  • Bake: Bake for 15 minutes, or until the English muffins are golden brown and toasted, the cheese is melted and bubbly, and the egg mixture is cooked through.
