Description

This Strawberry Caprese Avocado Toast with Burrata is the perfect light summer appetizer, and only requires 6 main ingredients! The combination of fresh strawberries, mashed avocado, creamy burrata cheese, and sweet balsamic glaze is absolutely to die for! The addition of fresh basil and flaky sea salt puts it over the top!

  • 4 thick slices crusty, whole grain bread*, toasted
  • 2 ripe avocados, pitted
  • Squeeze of fresh lemon juice (about 1-2 teaspoons)
  • Flaky sea salt*, divided
  • 68 ounces fresh burrata cheese
  • 1 cup fresh strawberries, sliced
  • Fresh basil leaves
  • Balsamic glaze*, for drizzling
  • Freshly cracked black pepper (optional)

Instructions

  • Toast Bread: Toast the thick slices of crusty bread until golden brown and crisp using a toaster, oven broiler, or skillet.
  • Prepare Avocado Mash: While the bread toasts, place the avocado flesh in a medium bowl. Add a squeeze of lemon juice and a healthy pinch of flaky sea salt. Mash with a fork until you reach your desired consistency (chunky or smooth).
  • Assemble Toast:
    • Spread the mashed avocado mixture evenly onto each slice of warm toast.
    • Gently tear the burrata cheese into pieces and arrange them over the avocado mash on each toast.
    • Layer the sliced strawberries over the burrata.
    • Tuck fresh basil leaves amongst the strawberries and cheese.
  • Finish and Serve: Drizzle generously with balsamic glaze. Sprinkle with another pinch of flaky sea salt and freshly cracked black pepper (if desired). Serve immediately. Enjoy!

Notes

  • Bread: Use a sturdy, thick-sliced bread like sourdough, ciabatta, or a hearty whole grain loaf that toasts well.
  • Avocado: Choose ripe avocados that yield slightly to pressure.
  • Burrata: Fresh burrata provides incredible creaminess. Handle it gently. Serving it closer to room temperature enhances its texture. Fresh mozzarella can be substituted if burrata isn’t available.
  • Balsamic Glaze: You can use store-bought balsamic glaze or make your own by simmering balsamic vinegar until it reduces and thickens.
  • Flaky Sea Salt: Adds a nice textural crunch and burst of saltiness. Maldon salt is a popular choice.
