Creamy Ham Pasta Salad

Ingredients

Group: Salad Ingredients

  • 8 oz farfalle (bow-tie pasta)
  • 1 pound ham cooked, diced into ½ to 1 inch cubes
  • 8 oz cherry tomatoes sliced in half
  • 1 large cucumber sliced
  • 4 green onions chopped

Group: Salad Dressing

  • ½ cup mayonnaise
  • ¼ cup sour cream or Greek yogurt
  • 2 tablespoons Dijon mustard
  • 2 tablespoons lemon juice
  • ¼ teaspoon salt to taste

Instructions

  • Bring a pot of water to a boil. Add pasta and cook according to package instructions. When done, drain and rinse well with cold water to stop the cooking and cool the pasta.
  • In a medium bowl, combine all dressing ingredients: mayonnaise, sour cream (or Greek yogurt), Dijon mustard, and lemon juice. Whisk until well combined. Add salt to taste.
  • In a large bowl, combine the cooked and drained pasta, diced ham, halved cherry tomatoes, sliced cucumber, and chopped green onions.
    Add the salad dressing (start with less and add to taste) and toss to coat evenly. Season with additional salt if needed before serving.

Notes

Rinsing the pasta with cold water stops the cooking process so the pasta doesn't get mushy and ensures it doesn't absorb the dressing too quickly. This salad is excellent for using up leftover holiday ham.
