Ingredients

  • 4 oz pancetta, diced
  • 1 cup parmesan cheese, grated

Instructions

  • Cook spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  • In a large frying pan, cook the pancetta over medium heat until crispy. Remove from heat.
  • In a mixing bowl, whisk together eggs, cheese, and black pepper until smooth.
  • Add the hot spaghetti to the pancetta along with a splash of reserved pasta water. Quickly stir in the egg mixture to create a creamy sauce.
  • Serve immediately with extra cheese and pepper if desired.

Notes

Be cautious not to overheat the sauce once the eggs are added; high heat can cause them to scramble instead of creating a smooth, creamy coating for the pasta.
