This Bacon Guacamole Grilled Cheese Sandwich is a flavor-packed twist on the classic grilled cheese. It combines creamy guacamole, crispy bacon, crunchy tortilla chips (optional), and melted cheddar cheese between two slices of buttery, golden-brown sourdough bread.
Ingredients
- 2 slices sourdough bread (or other sturdy bread, gluten-free if needed)
- 1 tablespoon salted butter, softened to room temperature
- 1/2 cup shredded cheddar cheese (or 2 slices), room temperature
- 2 tablespoons guacamole, room temperature (store-bought or homemade)
- 2 slices bacon, cooked until crispy and crumbled (optional)
- 1 tablespoon tortilla chips, crumbled (optional)

Prepare Ingredients: Make sure the butter is softened, the cheese is at room temperature, and the guacamole is at room temperature. Cook and crumble the bacon (if using). Crush the tortilla chips (if using).

Butter Bread: Butter one side of each slice of bread evenly.

Assemble Sandwich:
- Lay one slice of bread, buttered-side down, on a clean surface.
- Sprinkle half of the shredded cheddar cheese (or place one slice) evenly over the unbuttered side of the bread.
- Spread the guacamole evenly over the cheese.
- Sprinkle the crumbled bacon over the guacamole.
- Sprinkle the crumbled tortilla chips (if using) over the bacon.
- Sprinkle the remaining cheddar cheese (or place the other slice) over the tortilla chips/bacon.
- Top with the second slice of bread, buttered-side up.
