Description

This Cheddar Bay Biscuit Bread is a quick and easy quick bread inspired by the famous Red Lobster Cheddar Bay Biscuits. It’s savory, cheesy, and garlicky, with a tender crumb and a flavorful, buttery topping.

For the Bread:

  • 1 3/4 cups (219g) all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon table salt (or fine sea salt)
  • 2 1/2 cups shredded cheddar cheese (see notes)
  • 1 large egg, lightly beaten
  • 1 cup milk (whole milk or 2%)
  • 4 tablespoons (1/2 stick, 57g) unsalted butter, melted and slightly cooled

For the Topping:

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley flakes
  • 4 tablespoons (1/2 stick, 57g) unsalted butter, melted

Instructions

  • Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or nonstick cooking spray.
  • Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  • Add Cheese: Add the shredded cheddar cheese to the dry ingredients and stir to coat the cheese with the flour mixture. This helps prevent the cheese from sinking to the bottom of the bread.
  • Combine Wet Ingredients: In a separate medium bowl, whisk together the lightly beaten egg, milk, and melted and slightly cooled butter until well combined.
  • Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients. Stir with a rubber spatula or wooden spoon until just combined. Do not overmix. The batter will be thick.
  • Transfer to Pan: Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake: Bake in the preheated oven for 35-40 minutes, or until a wooden toothpick inserted into the center comes out clean (or with a few moist crumbs attached) and the top is golden brown.
  • Make Topping: While the bread is baking, prepare the topping. In a small bowl, combine the melted butter, garlic powder, onion powder, and dried parsley flakes. Stir well to combine.
  • Top and Cool: Remove the bread from the oven. Immediately pour the melted butter topping evenly over the hot bread. Let the bread cool in the pan for at least 10 minutes before removing it to a wire rack to cool completely (or slice and serve warm).

Notes

  • Cheddar Cheese: Sharp cheddar cheese is recommended for the best flavor, but you can use mild or medium cheddar, or a combination of cheeses. Freshly shredded cheese melts better than pre-shredded cheese.
  • Milk: Whole milk or 2% milk will give the bread the best texture, but you can use skim milk if you prefer.
  • Butter: Make sure the melted butter is cooled slightly before adding it to the wet ingredients. This prevents the eggs from scrambling.
  • Do Not Overmix: Overmixing the batter can develop the gluten in the flour, resulting in a tough bread. Mix just until the ingredients are combined.
  • Baking Time: The baking time may vary slightly depending on your oven.
  • Storage Store in a container.
