These Buffalo Chicken Egg Rolls are a crispy, cheesy, and flavorful appetizer or snack. They’re filled with a mixture of rotisserie chicken, cream cheese, buffalo sauce, cheddar and mozzarella cheeses, and ranch seasoning, all wrapped in egg roll wrappers and air-fried to golden perfection.
Ingredients
- 2 cups (280g) cooked rotisserie chicken, finely diced (or other cooked chicken)
- 4 ounces cream cheese, softened to room temperature
- 1/4 cup buffalo wing sauce (such as Frank’s RedHot), plus more for serving
- 1 cup (113g) shredded sharp cheddar cheese
- 1 cup (113g) shredded mozzarella cheese
- 1 (1-ounce) packet dry ranch dressing/seasoning mix
- 8 egg roll wrappers
- Water, for sealing egg roll wrappers
- Nonstick cooking spray
- Ranch dressing or blue cheese dressing, for serving

Prepare Filling: In a large bowl, combine the finely diced cooked chicken, softened cream cheese, buffalo wing sauce, shredded cheddar cheese, shredded mozzarella cheese, and dry ranch seasoning mix. Stir well until all ingredients are thoroughly combined.

Assemble Egg Rolls:
- Lay one egg roll wrapper on a clean work surface with one corner pointing towards you (like a diamond).
- Place about 1/3 cup of the chicken mixture in the center of the wrapper.
- Lightly moisten the edges of the wrapper with water.
- Fold the bottom corner of the wrapper up and over the filling.
- Fold in the right and left corners towards the center, pressing gently to seal.
- Tightly roll up the egg roll from the bottom to the top, enclosing the filling completely. Seal the top edge with a little more water if needed.
- Repeat with the remaining egg roll wrappers and filling.

Preheat Air Fryer: Preheat your air fryer to 400°F (200°C).

Air Fry Egg Rolls (in Batches):
- Place the assembled egg rolls in the basket of your air fryer in a single layer. Do not overcrowd the basket; work in batches if necessary.
- Lightly spray the tops of the egg rolls with nonstick cooking spray.
- Air fry for 3-4 minutes.
- Carefully flip the egg rolls over.
- Spray the other side with nonstick cooking spray.
- Air fry for another 3-4 minutes, or until the egg rolls are golden brown and crispy, and the filling is heated through.
