Description

This Strawberry Colada Smoothie is a refreshing and tropical blend of fresh strawberries, frozen pineapple and banana, coconut Greek yogurt, and coconut milk. It’s a delicious and healthy way to start your day or enjoy a cool treat.

  • 8 ounces fresh strawberries, chilled and hulled
  • 1 ripe banana, peeled and frozen (see notes)
  • 1 1/2 cups frozen pineapple chunks
  • 1 (5.3-ounce) container coconut Greek yogurt (or other flavored Greek yogurt)

 

  • 1 1/41 1/2 cups unsweetened coconut milk beverage (from the refrigerated dairy section), or light coconut milk blended with water (see notes)

Instructions

  • Puree Strawberries: Place the chilled, hulled strawberries in a food processor. Pulse until they are well pureed into a smooth consistency. Set aside.

  • Combine Remaining Ingredients: In a blender, combine the frozen banana chunks, frozen pineapple, coconut Greek yogurt, and 1 1/4 cups of the coconut milk beverage.

  • Blend Smoothie: Blend the mixture on high speed until completely smooth and creamy. If the smoothie is too thick, add the remaining 1/4 cup of coconut milk beverage, a little at a time, until it reaches your desired consistency.

  • Layer Smoothie (Optional): For a layered effect:

    • Pour about 1/3 of the pineapple-banana mixture into each serving glass.
    • Spoon a generous amount of the strawberry puree on top of the pineapple-banana layer.
    • Repeat the layers twice more, ending with the pineapple-banana mixture.
    • Use a butter knife or a spoon to gently swirl the layers together, creating a marbled effect.
  • Serve Immediately: Serve the smoothie immediately.


Notes

  • Strawberries: Fresh, chilled strawberries are recommended for this recipe, but frozen strawberries can also be used. If using frozen, you may need to reduce the amount of ice or let them thaw slightly.
  • Banana: Freeze the banana for a thicker, colder smoothie. Peel the banana before freezing.
  • Pineapple: Frozen pineapple chunks are recommended for a thick and cold smoothie.
  • Coconut Greek Yogurt: Coconut Greek yogurt adds a delicious coconut flavor and creamy texture. You can substitute other flavors of Greek yogurt, such as vanilla or plain.
  • Coconut Milk Beverage: Use the unsweetened coconut milk beverage found in the refrigerated dairy section (like Silk or So Delicious), not canned coconut milk. If using canned light coconut milk, blend it with an equal amount of water before adding it to the smoothie (1 part light coconut milk : 1 part water). Do not use full-fat canned coconut milk in this recipe.
