Description

This hearty and flavorful Loaded Breakfast Sandwich is packed with all your breakfast favorites: sausage, bacon, egg, cheese, avocado, and a spicy chipotle mayo. It’s the perfect way to start your day!


Ingredients

  • 1 large avocado, mashed
  • 1/2 tablespoon lemon juice
  • Salt, to taste
  • 4 tablespoons mayonnaise
  • 1 chipotle chili pepper in adobo sauce, finely chopped
  • 4 English muffins (or buns or croissants), split and lightly toasted (use gluten-free if needed)
  • 4 slices cheddar cheese
  • 4 cooked breakfast sausage patties
  • 4 strips cooked bacon

 

  • 4 eggs, fried, scrambled, or made into an omelet

Instructions

  • Prepare Avocado: In a small bowl, mash the avocado with a fork. Stir in the lemon juice and salt to taste.
  • Make Chipotle Mayo: In another small bowl, combine the mayonnaise and the finely chopped chipotle pepper in adobo sauce. Mix well.
  • Assemble Sandwiches: Spread a layer of the chipotle mayo on the bottom half of each toasted English muffin. Top with a slice of cheddar cheese, a cooked sausage patty, a strip of bacon, and your prepared egg (fried, scrambled, or omelet).
  • Add Avocado: Spread a generous amount of the mashed avocado on the top half of each English muffin.
  • Complete and Serve: Carefully place the top half of the English muffin onto the sandwich. Serve immediately.

Notes

  • Bread Options: You can use English muffins, buns, croissants, or even bagels for these sandwiches. Use gluten-free bread if needed.
  • Cheese: Cheddar is a classic choice, but you can substitute any cheese you like, such as Monterey Jack, pepper jack, or provolone.
