- 1 large avocado, mashed
- 1/2 tablespoon lemon juice
- Salt, to taste
- 4 tablespoons mayonnaise
- 1 chipotle chili pepper in adobo sauce, finely chopped
- 4 English muffins (or buns or croissants), split and lightly toasted (use gluten-free if needed)
- 4 slices cheddar cheese
- 4 cooked breakfast sausage patties
- 4 strips cooked bacon
- 4 eggs, fried, scrambled, or made into an omelet
Instructions
- Prepare Avocado: In a small bowl, mash the avocado with a fork. Stir in the lemon juice and salt to taste.
- Make Chipotle Mayo: In another small bowl, combine the mayonnaise and the finely chopped chipotle pepper in adobo sauce. Mix well.
- Assemble Sandwiches: Spread a layer of the chipotle mayo on the bottom half of each toasted English muffin. Top with a slice of cheddar cheese, a cooked sausage patty, a strip of bacon, and your prepared egg (fried, scrambled, or omelet).
- Add Avocado: Spread a generous amount of the mashed avocado on the top half of each English muffin.
- Complete and Serve: Carefully place the top half of the English muffin onto the sandwich. Serve immediately.
